Seems exaggerated to pay attention to a thing so lowly as the small cucumber or gherkin however the transformational process of lactic fermentation has changed these little beauties over time into what tastes like pure magic. These pickles were made in February and March of this year and now we are on the last jars. The taste itself is typically sour and salty I suppose but the process has changed all the elements, swapped them round. Nothing is clear and distinguishable. It is the experience of a singular moment over time where in bacteria, air, the fruit of the cucumber and time create the stuff upon which I feed to grow, build, dream and love and this life to live.
